30 Day Muffins

Ingredients
2½ cups Whole Wheat Flour
2 cups Bran
1½ tsp Bicarbonate of Soda
500ml Buttermilk
200g Raisins/dates
2 Eggs
½ cup Oil
½ cup Brown Sugar
1 tsp Vanilla Essence
Pinch of Salt
Method
Mix all dry ingredients
Mix in all wet ingredients
Refrigerate overnight (can be kept up to 30 days in refrigerator)
Bake for 25 minutes at 160°C
