Adobo Pork

Recipe adapted from Panlasang Pinoy

Filipino adobo pork is similar to our Filipino chicken adobo and the pork or chicken can be substituted for any other meat. A beautiful, deep-flavoured, marinated dish.

Ingredients

  • 1kg Pork Neck (pork belly is more traditional, but shoulder will also do)

  • 2 - 4 tbsp crushed Garlic

  • 5 dried Bay Leaves

  • 4 tbsp Vinegar

  • 125ml Soy Sauce

  • 1 tbsp Peppercorns, crushed in a pestle & mortar

  • 500ml Water

  • Salt to taste

  • Oil for frying

Method

  1. Combine the pork belly, soy sauce, bay leaves, peppercorns and garlic then marinade for at least 1 hour, preferably overnight.

  2. Heat some oil in a large heavy-based pot.

  3. Remove the meat from the marinade (DON'T throw out the marinade) and brown it in the oil.

  4. Pour the marinade over the meat along with the water and bring to a boil.

  5. Simmer for 40 minutes to an hour.

  6. Add the vinegar and simmer for 12 to 15 minutes until the sauce thickens.

  7. Add salt to taste
