Almond Cake

Ingredients
200g ground almonds
160ml (â…“ cup) dessicated coconut
250ml (1 cup) xylitol (or ??? sugar)
4 eggs
200g butter, melted and slightly cooled
60ml (¼ cup) flaked almonds
2 tsp Vanilla Essence
Whipped cream to serve
Method
Line a 23cm springform cake tin with baking paper
Combine ground almonds, coconut and xylitol or sugar
In another bowl or stand mixer, beat together eggs, vanilla and butter
Mix into almond mixture
Scrape into prepared tin and scatter flaked almonds on top
Bake for about 55 minutes at 180°C or until cooked when tested with a skewer
Cool in tin for a while until it has firmed up.
Serve warm with cream
