Apple Sauce

Ingredients
1 kg Apples, cored
Sugar to taste (if required, approximately 0.25 cup)
About 2 cups Water (judge as you go)
Juice of 1 Lemon
0.5 tsp Salt
Method
Cut apples into approximately cubes
Add all ingredients, except sugar, to pot and heat on high.
Bring to a boil, then cover and reduce heat to simmer for 10 minutes.
Add sugar if required.
Simmer for a further 10 minutes or until the apples have softened significantly.
Stir frequently, making sure that the apples do not stick to the bottom of the pot. Add more water if necessary.
Mash with a stick blender to your desired consistency.

Changed from 3 cups water to 2 after last batch (May 2024) turned out a bit runny, but it depends on apples...
Last batch was made from 7kgs of apples (half Granny Smith and half another sweet red apple).
Made enough for 14 honey jars (ie. 1kg apples to 2 jars), but the water has been reduced now, so take notes next time.
Sugar has been reduced twice now. The current sugar content is a quarter of the original recipe, but all depends on the sweetness of the apples.
