Aunty's Cheesecake

from Antoinette's kitchen

Ingredients

Crust

  • 360ml Marie Biscuits, crumbed

  • 60ml Sugar

  • 15ml melted Butter


Filling

  • 450g Cream Cheese

  • 2 Eggs

  • 120ml Sugar

  • 5ml Vanilla Essence


Topping

  • 240ml Sour Cream

  • 60ml Sugar

  • 5ml Vanilla Essence

Method

  1. Mix all crust ingredients together and pat firmly over bottom halfway up sides of baking tin (measure tin used and let me know) and set aside

  2. Beat all filling ingredients together and pour into crust

  3. Bake for 20 minutes at 160°C and then cool for 15 minutes

  4. Raise oven temperature to 230°C

  5. Mix topping ingredients together and pour over filling

  6. Bake for a further 10 minutes, cool, cover and chill before serving

Made for us on Antoinette's SA visit in April 2009.

To try next time: use ginger nuts instead of Marie Biscuits and leave out sugar...
