Baked Cheesecake

New York-style Baked Cheesecake

Ingredients

  • Pack of Ginger Nuts or Digestive Biscuits (200 to 225g)

  • 75g Butter

  • 1 tsp ground Cinnamon

  • 650g Mascarpone Cheese

  • 125g Caster Sugar

  • 1 tbsp Cornflour

  • ¼ tsp Vanilla extract

  • 4 large Eggs, separated

  • 150ml soured Cream or Fromage Frais

Method

  1. Butter a 23cm round spring-form baking tin and line base with greaseproof paper

  2. Crumb biscuits in a food processor

  3. Heat butter and cinnamon gently until butter melts

  4. Pour into crushed biscuits and mix thoroughly

  5. Press mixture into and even layer at base of baking tin (don't compress too much)

  6. Beat cheese until smooth

  7. Add sugar and beat until smooth

  8. Beat in cornflour, vanilla, egg yolks and soured cream

  9. Whisk egg whites separately until stiff

  10. Fold egg whites into cheese mixture

  11. Spoon into tin

  12. Cook at 150°C for 45 to 50 minutes or until golden brown and just firm to a light touch in the centre

  13. Turn off heat and leave in oven until cold (1 to 2 hours)

  14. Chill in fridge for at least 4 hours
