Banoffee Pie

Ingredients
560g Gingernut or Digestive or Chocolate Digestive biscuits
350g Butter
1200g Condensed Milk
3 to 4 Bananas
600ml double Cream
Cocoa Powder or chocolate flakes to decorate
Method
Place unopened tins of condensed milk in a pan covered with boiling water and simmer for 2 hours
Melt butter over gentle heat
Crush biscuits in food processor
Mix butter and biscuit together well
Grease a 27cm round tin and press the biscuit mixture into the base
Leave in fridge to set
Allow condensed milk to cool sufficiently to handle tins
Open carefully as the contents may squirt out under pressure
Spread over biscuit base
Slice bananas and arrange over pie
Whip cream until thick and spread over bananas
Sprinkle with cocoa powder or chocolate
Alternative method...
You can try caramelisation process in microwave as follows:
Place milk in bowl
Microwave on high for about 1 minute then stir
Repeat this for 15 to 20 minutes or until caramelised (brown and slightly stiff)
You may need to add a little water to compensate for evaporation
Do not let it crystalise
Try adding a teaspoon of instant coffee powder to cream when whipping
