Beetroot Salad

Omi's Beetroot Salad

Ingredients

  • Beetroot

  • Onions, finely sliced into rings

  • Boiling water

  • White Wine Vinegar

  • Sugar

  • Vegetable oil

Method

  1. Boil as many beetroot as you like (normally a pot full) without topping & tailing them as they bleed

  2. When the beetroot is cooked, peel under running cold water while still hot

  3. Slice into the large bowl

  4. Cover the beetroot & onions with boiling water & white wine vinegar, about 2:1

  5. Sweeten to taste with sugar

  6. When the taste is right add 2 to 3 tbsp of vegetable oil
