Cake in a Mug (Peanut Butter)

Quickest cake for a quick sugar fix!

Ingredients

  • 1/4 cup all-purpose flour

  • 1½ - 2 tbsp Sugar

  • ¼ tsp baking powder

  • 2 tbsp milk

  • 1 tbsp vegetable oil or melted butter

  • 2 tbsp peanut butter

  • Dash vanilla essence

  • 1 tbsp chocolate chips (optional, but highly recommended!)

Method

  1. Combine the dry ingredients (first 3) in a microwave-safe mug and stir them together with a fork until well combined.

  2. Add the wet ingredients (next 4) and mix until smooth, making sure to scrape the bottom of the mug to incorporate all ingredients.

  3. If using chocolate chips, stir them into the batter now.

  4. Microwave for 60-90 seconds (I like 60 seconds!). Microwave wattages vary, so it's best to start with 60 seconds. The cake should be just set, but still might look slightly glossy on top. It will continue to cook a bit as it cools.

  5. I love mine with cream if there is some in the fridge.

Notes

  • Don't Overcook: Overcooked mug cakes can be dry and rubbery. It's better to slightly undercook it for a softer, more moist texture.

  • Check Doneness: If after 60 seconds it's still too wet, microwave in 10-15 second increments until set.

  • Toppings: Drizzle with cream, extra peanut butter, melted chocolate, a scoop of ice cream, or whipped cream.

  • Chocolate Peanut Butter: Add 1-2 teaspoons of unsweetened cocoa powder to the dry ingredients for a chocolate peanut butter version.
