Chocolate Chip Bloaters

Ingredients

  • 90g Butter

  • 1 tsp Vanilla Essence

  • â…“ cup (75g) Caster sugar

  • â…“ cup (75g) firmly packed Demerera Sugar

  • 1 Egg

  • ½ cup (75g) Self-raising flour

  • ¾ Cup (105g) Flour

  • ¾ Cup (135g) Chocolate

  • ½ cup (50g) chopped Pecan nuts, Walnuts or Almonds

  • 1 tbsp Milk

Method

  • Beat butter, vanilla essence and sugars, till light and fluffy, then beat in egg

  • Stir in flours, roughly chopped chocolate and nut chunks and milk

  • Place cookies on parchment paper, to own required size, allowing 2cm between, makes about 20 in my case, they don’t spread much

  • Bake at 160°C for 15 to 20 minutes or until firm and lightly brown

  • Leave to cool on wire racks
