Chocolate Mousse

Ingredients

  • 175g Dark Chocolate

  • 50ml Brandy

  • 4 Egg Whites

  • 120g Castor Sugar

  • Grated peel from 1 Orange (from original recipe, but we tend to leave this out)

Method

  1. Melt chocolate in a bain marie

  2. Beat in brandy and orange peel until smooth

  3. Whisk egg whites

  4. Add sugar and whisk further

  5. Fold in chocolate

  6. Chill before serving
