Chocolate Torte

Rich Chocolate Torte

Ingredients

  • 100g Castor Sugar

  • 50ml Water

  • 400g Chocolate

  • 568ml Double Cream

  • 300g Chocolate Digestives

  • 100g Butter

  • 50g White Chocolate & 50g Dark Chocolate for decoration

Method

  1. Grease a 25cm pie dish

  2. Put sugar & water into saucepan and heat gently until sugar is dissolved

  3. Bring syrup to boil and boil rapidly for a further 2 minutes

  4. Remove from heat and stir in chocolate and 150ml of cream

  5. Stir until chocolate melts and mixture becomes smooth

  6. Pour into large bowl and cool for 10 minutes

  7. Whip remaining cream until thick and fold into chocolate mixture

  8. Spoon into pie dish

  9. Crumb biscuits in a food processor

  10. Melt butter in a pan and pour over the biscuits

  11. Blend for a further 10 seconds

  12. Pour crumbs over the chocolate mixture and press firmly but evenly over the surface

  13. Cover with clingfilm and chill for at least 4 hours

  14. Turn out onto a serving plate and cover with chocolate shavings
