Coconut Fish with Saffron Rice

First tried when we were staying at the Kochs in 2006 with Gretchen & Melissa

Ingredients

  • 1 Onion, finely chopped

  • 3 Garlic cloves, finely chopped

  • 30ml Butter

  • 1 tsp ground Turmeric

  • ½ tsp Chilli Powder

  • Salt

  • ½ tsp ground Coriander

  • 425ml Coconut Milk

  • 800g Fish fillet

  • 50g Raisins

  • Coriander leaves to garnish

Method

  1. Sweat onion & garlic in butter

  2. Add spices & sweat for short time

  3. Add coconut milk & raisins, bring to boil & simmer, uncovered, for 10 minutes

  4. Add fish & simmer further 8 minutes

  5. Serve on Basmati rice with saffron and sprinkle with chopped coriander
