Crab Cakes

Ingredients
450g Crab Meat (if tinned, squeeze out all moisture)
1 Red Pepper
1 Yellow Pepper
½ medium Red Onion
¾ cup ground water biscuits (or 1 cup bread crumbs)
Juice of 1 Lemon
1½ tbsp Dijon Mustard
Salt & Pepper to taste
Cayenne Pepper or Tabasco to taste
Old Bay to taste*
¾-1 cup Mayonnaise
¼ cup Chives, chopped
¼ cup Parsley, chopped
Method
Cut peppers & onion into small dice and sauté until just soft
Season with salt & pepper and let cool
Mix crab meat with sautéed onions, peppers, chives and parsley
Fold together lemon juice, mayonnaise, mustard and crackers/crumbs
Add to crab meat mixture
Season with salt, pepper, old bay and cayenne/Tabasco
Mold into desired cake size
Lightly dust in flour
Pan fry until golden brown and warm through
Notes
* Old Bay is an American herb mix consisting of Celery Salt, Paprika, Mustard, Red Pepper, Bay Leaves, Cloves, Allspice, Ginger, Mace, Cardamom and Cinnamon
