Cream of Cauliflower Soup

Ingredients

  • 30g Butter

  • 1 Onion, finely chopped

  • 1 Leek, washed and finely sliced

  • 450g (small) Cauliflower, broken into florets

  • 300ml Chicken Stock

  • 300ml Milk

  • 2 Rashers of Bacon, rinds removed

  • 60g Cheddar cheese, grated

  • Salt and Pepper

Method

  1. Melt butter, add onion and leek, fry for 5 minutes

  2. Add cauliflower, stock and milk, bring to the boil

  3. Reduce heat, cover and simmer for 20 minutes until cauliflower is tender

  4. Grill the bacon until crisp, crumble

  5. Purée cauliflower soup, return to rinsed out pan

  6. Stir in cheese bit by bit over a low heat

  7. Season to taste

  8. Sprinkle bacon on top when served
