Creamy Broccoli and Blue Cheese Soup

Ingredients

  • 1 tbsp Oil

  • ½ Onion, chopped

  • 500g Broccoli, chopped

  • 1300ml Chicken Stock

  • 200g Blue Cheese, crumbled

  • 75ml Double Cream

Method

  1. Sauté onion in oil until translucent

  2. Add broccoli and stock and bring to the boil

  3. Simmer for 10 to 15 minutes, until broccoli is softened

  4. Purée with a stick blender

  5. Stir in cream and half the cheese

  6. Serve sprinkled with rest of blue cheese
