Daph's Apricot Tarts

Ingredients
2½ cups Flour
240ml Sour Cream
230g Butter
Apricot jam
Filling
140g melted Butter
140g Sugar
2 Eggs
30g Cake Flour
1 Lemon, rind grated
Dash of Vanilla extract
Icing sugar
Method
Mix the flour, sour cream and butter to make a dough
Line pastry tins with dough and add a little apricot jam in each
Then make the filling, pour melted butter over sugar and lemon
Beat in eggs and add flour
Pour filling over apricot jam and sprinkle with icing sugar
Bake at 200°C on second shelf from bottom for 20 minutes
When cool sprinkle again with icing sugar
