Devil's Food Cake

Ingredients

  • 1¼ cups (175g) flour

  • ½ cup (60g) cocoa powder

  • 1 tsp (5ml) bicarbonate of soda

  • ¼ tsp baking powder

  • ½ tsp salt

  • 60g butter

  • 1½ cups (300g) sugar

  • 3 eggs, at room temperature

  • 1 tsp (5ml) vanilla essence

  • ½ cup (125ml) buttermilk, at room temperature

  • ½ cup (125ml) strong coffee, cool


Chocolate Ganache

  • 1½ cups (375ml) cream

  • 350g dark chocolate, chopped

Method

  1. Grease two 23cm cake tins

  2. Sift all dry ingredients into a bowl

  3. Cream together butter and sugar until pale

  4. Slowly mix in remaining wet ingredients

  5. Slowly mix in dry ingredients

  6. Divide batter between the two cake tins

  7. Bake for 30 minutes at 180°C

  8. Leave to cool for 10 minutes then turn out of tins and set aside to cool completely


Ganache

  1. In a saucepan, heat the cream over a medium heat

  2. Remove from heat and add chocolate

  3. Leave chocolate to melt for a few minutes and then stir to a smooth gloss

  4. Set aside to cool completely

  5. Once ganache and cake are cool, ice and serve...
