Dutch Baby

from Alton Brown (Good Eats)

This is essentially a large oven-baked pancake

Ingredients

  • 3 tbsp Butter

  • ½ cup Flour

  • 3 tbsp Sugar

  • ½ cup Milk, room temperature

  • 2 large Eggs, room temperature

Method

  1. Place a heavy 20 to 25cm cast iron skillet or pan with butter in the oven and heat to 190°C

  2. The batter must not sit around for long, so only start mixing ingredients when the skillet / pan is nearly up to temperature

  3. Beat all ingredients together, but don't over work it

  4. Remove skillet from oven and mix butter into the mix

  5. Pour mixture straight back into hot skillet / pan

  6. Bake in oven for about 15 - 20 minutes or until edges are puffed and brown

  7. Serve with golden syrup or lemon wedges and cinnamon sugar

Notes

We use our old 24cm Husqvarna cast iron pan from Tove's Norwegian granny and cook for 18 minutes. Perfect!
