Eleanor's Salmon

from Nanna's kitchen

Ingredients

  • 2 one-inch thick salmon fillets

  • 2 scallions cut into 5cm long strips

  • ¼ cup ginger cut into ½cm thick chunks

  • 1½ tbsp olive oil

  • ¼ cup white wine, rice wine or sweet sake

  • ½ cup water

  • 1 tbsp soy sauce

  • 1 tsp sugar

  • salt and pepper

  • sesame oil (optional)

Method

  1. Heat oil in pan on high heat

  2. Salt and pepper both sides of the salmon fillets

  3. Place filets in pan skin-side down and do not disturb

  4. Cook on high for a minute then turn heat down to medium-high and continue to cook for 3 min

  5. Turn filets over and cook for another 2 minutes

  6. Remove filets from pan and set aside on a plate

  7. Turn heat back up to high and add ginger and scallions

  8. Cook until slightly tender (about 1 minute)

  9. Add wine and deglaze pan

  10. Add soy sauce, water, and sugar. Bring to a boil, then reduce heat to simmer

  11. Place salmon filets carefully back into pan and simmer until salmon is cooked through (about 2 minutes)

  12. Drizzle with a few drops of sesame oil if desired
