Fridge Bran Muffins
from Carol Davison's kitchen (Feb 2009)

Ingredients
2 Eggs
1½ cups Brown Sugar
½ cup Sunflower Oil
2 cups Bran
2½ tsp Bicarbonate of Soda
2½ cups Plain Flour
Pinch Salt
2 cups Milk
1 tsp Vanilla Essence
Method
Beat the eggs and sugar together and add the oil
Mix the dry ingredients
Mix the milk and vanilla essence together
Add ½ the egg mixture to the dry ingredients and beat
Add ½ the milk mixture and beat
Then the rest of the egg mix
Rest of milk mix
Put in the fridge overnight (or up to 2 weeks)
Bake at 180°C until dark brown – about 15min for baby muffins and 25 for large
Add raisins or nuts if you want
