Fridge Bran Muffins

Ingredients

  • 2 Eggs

  • 1½ cups Brown Sugar

  • ½ cup Sunflower Oil

  • 2 cups Bran

  • 2½ tsp Bicarbonate of Soda

  • 2½ cups Plain Flour

  • Pinch Salt

  • 2 cups Milk

  • 1 tsp Vanilla Essence

Method

  1. Beat the eggs and sugar together and add the oil

  2. Mix the dry ingredients

  3. Mix the milk and vanilla essence together

  4. Add ½ the egg mixture to the dry ingredients and beat

  5. Add ½ the milk mixture and beat

  6. Then the rest of the egg mix

  7. Rest of milk mix

  8. Put in the fridge overnight (or up to 2 weeks)

  9. Bake at 180°C until dark brown – about 15min for baby muffins and 25 for large

  10. Add raisins or nuts if you want
