Gazpacho

Ingredients

  • 1 Green Pepper

  • 1 Red Pepper

  • ½ Cucumber

  • 1 Onion

  • 500g ripe Tomatoes

  • 900ml Tomato Juice

  • 30ml Red Wine Vinegar

  • 30ml Olive Oil

  • 15ml Sugar

  • 15ml Hot Chilli Sauce / Tobasco

  • Salt & Pepper

Method

  1. Roughly chop all other ingredients and process in a blender until smooth

  2. Adjust seasoning to taste and chill thoroughly (preferably overnight)
