Green Pawpaw and Avo Salad

Ingredients

Salad

  • 1 large or 2 small Green Apples, cubed

  • 1 small Green Pawpaw, peeled and cubed

  • 1 large or 2 small Avocados, peeled and cubed


Dressing

  • Zest of 1 Lemon

  • Juice of 2 Lemons

  • 2 Spring Onions, finely sliced

  • 1-2 tbsp Sugar

  • 2 tbsp Fish Sauce

  • 2 cloves Garlic, crushed

  • 2-3 Chillis, finely chopped

  • 0.5 cups Coriander leaves, roughly chopped

Method

  1. Don't make this salad too far ahead of your meal as it has the potential to go a bit mushy

  2. Mix all the dressing ingredients together

  3. Mix all the fruits together and gently mix in the dressing

Notes

Pawpaws and avos can be substituted with mango, carrots or fennel bulb, or any combination of these
