Green Peppercorn Chicken

Ingredients

  • 6 Chicken portions

  • 1 tbsp Flour

  • 1 tbsp Butter

  • 2 tbsp Port

  • 250ml White Wine

  • 250ml Chicken Stock

  • 30g Green Peppercorns

  • 150ml Cream

Method

  1. Dip chicken in flour

  2. Fry in butter until golden

  3. Add port, wine and half the stock and lower heat

  4. Rinse peppercorns under cold water

  5. Add half to the pan & crush

  6. Add remaining peppercorns whole

  7. Cover and cook until chicken is tender

  8. Remove chicken from pan

  9. Add remaining stock and boil rapidly until slightly thickened

  10. Add cream and salt to taste

  11. Thicken with cornflour if required

  12. Return chicken to pan to reheat
