Kleftiko

Ingredients

  • 2 large Lamb Shanks

  • Juice of 1 large Lemon

  • 3 tbsp Olive Oil

  • 1 tsp Garlic, chopped

  • Salt & Pepper

  • 1 tsp dried Origanum (2 tsp if fresh)

  • 1 tsp dried Thyme (2 tsp if fresh)

  • 1 tsp dried Rosemary (2 tsp if fresh)

  • 2 Bay Leaves, crumbled

  • 1 cup Water

Method

  1. Sprinkle shanks with lemon juice

  2. Rub with oil, garlic, salt, pepper & herbs

  3. Place meat in roasting pan and add water and cover with well-sealed lid

  4. Bake at 100°C until bone separates from meat (about 4 to 6 hours)

  5. Top up water whenever necessary
