Lamb Casserole with Honey and Orange
from Omi's kitchen

Ingredients
30ml Vegetable Oil
1.1kg Stewing Lamb
350g Shallots
10ml Ground Coriander
15ml Ground Cumin
50g Plain Flour
2 Cloves Crushed Garlic
30ml Chopped Parsley
30ml Honey
45ml Tomato Puree
300ml Orange Juice
45ml Sweet Sherry
300ml Lamb Stock
Salt & Pepper to taste
Method
Heat oil in a large casserole dish
Brown the lamb in the oil (a few pieces at a time)
Remove the lamb from the casserole dish
Lightly cook the shallots and spices for 5 minutes
Stir in the flour and cook for another minute
Stir in the remaining ingredients (including the lamb)
Cover and cook in oven for 1½ hours at 160°C
