Lamb Casserole with Honey and Orange

Ingredients

  • 30ml Vegetable Oil

  • 1.1kg Stewing Lamb

  • 350g Shallots

  • 10ml Ground Coriander

  • 15ml Ground Cumin

  • 50g Plain Flour

  • 2 Cloves Crushed Garlic

  • 30ml Chopped Parsley

  • 30ml Honey

  • 45ml Tomato Puree

  • 300ml Orange Juice

  • 45ml Sweet Sherry

  • 300ml Lamb Stock

  • Salt & Pepper to taste

Method

  1. Heat oil in a large casserole dish

  2. Brown the lamb in the oil (a few pieces at a time)

  3. Remove the lamb from the casserole dish

  4. Lightly cook the shallots and spices for 5 minutes

  5. Stir in the flour and cook for another minute

  6. Stir in the remaining ingredients (including the lamb)

  7. Cover and cook in oven for 1½ hours at 160°C
