Lemon Cordial

from Jeanine Clark's kitchen (received some as gift when we first met her)

Ingredients

  • 16 to 20 Lemons

  • 2kg Sugar

  • 1½ l boiling Water

Method

  1. Wash lemons

  2. Grate rind of 8 lemons

  3. Squeeze 1 litre of lemon juice

  4. Add all ingredients together and stir until sugar has dissolved

  5. Leave over night and then strain into glass bottles

Notes

Keep juice in fridge as it has no preservatives
