Lemon Cordial
from Jeanine Clark's kitchen (received some as gift when we first met her)

Ingredients
16 to 20 Lemons
2kg Sugar
1½ l boiling Water
Method
Wash lemons
Grate rind of 8 lemons
Squeeze 1 litre of lemon juice
Add all ingredients together and stir until sugar has dissolved
Leave over night and then strain into glass bottles
Notes
Keep juice in fridge as it has no preservatives
