Lemon Delight

Maureen's Lemon Delight

Ingredients

  • 1 Tbsp butter

  • 2 eggs, separated

  • 1 cup milk

  • Pinch of salt

  • 4 Tbsp flour

  • ¾ cup castor sugar

  • Juice of 1 medium lemon

Method

  1. Cream butter and sugar

  2. Add flour and lemon juice and mix

  3. Beat yolks separately and then blend into mixture

  4. Slowly mix in milk

  5. Beat egg whites to a stiff peak

  6. Fold egg whites into mix

  7. Pour into pie dish

  8. Place an oven proof (pyrex) dish half-filled with water into oven along with pie dish

  9. Bake at moderate temperature (???? 180°C) for about an hour
