Lemon Delight

Maureen's Lemon Delight

Ingredients
1 Tbsp butter
2 eggs, separated
1 cup milk
Pinch of salt
4 Tbsp flour
¾ cup castor sugar
Juice of 1 medium lemon
Method
Cream butter and sugar
Add flour and lemon juice and mix
Beat yolks separately and then blend into mixture
Slowly mix in milk
Beat egg whites to a stiff peak
Fold egg whites into mix
Pour into pie dish
Place an oven proof (pyrex) dish half-filled with water into oven along with pie dish
Bake at moderate temperature (???? 180°C) for about an hour
