Maureen's Cheesecake
from Maureen Moffat's kitchen

Ingredients
Base
1 cup Ginger Nut or Marie biscuits, crushed
100g Butter, melted
Filling
2 Eggs, separated
½ cup Sugar (try ¼ cup... seemed a bit sweet)
500g Cream Cheese
1 cup Cream
1 cup Condensed Milk
Method
Mix crushed biscuits with melted butter and pack into fairly deep 23cm round baking tin
Beat egg yolks and sugar well
Add cream cheese, cream & condensed milk and mix well
Beat egg whites until stiff
Fold egg whites gently into cheese mix
Pour over base
Bake at 180°C for 25 minutes (top of cake should go lightly golden-brown)
Switch off oven and open door
Leave to set for 5 minutes in the oven
Remove from oven and allow to cool
Notes
Maureen gave us leftovers from Dirk's birthday (12 July 2020). Yummy!
