Maureen's Cheesecake

from Maureen Moffat's kitchen

Ingredients

Base

  • 1 cup Ginger Nut or Marie biscuits, crushed

  • 100g Butter, melted


Filling

  • 2 Eggs, separated

  • ½ cup Sugar (try ¼ cup... seemed a bit sweet)

  • 500g Cream Cheese

  • 1 cup Cream

  • 1 cup Condensed Milk

Method

  1. Mix crushed biscuits with melted butter and pack into fairly deep 23cm round baking tin

  2. Beat egg yolks and sugar well

  3. Add cream cheese, cream & condensed milk and mix well

  4. Beat egg whites until stiff

  5. Fold egg whites gently into cheese mix

  6. Pour over base

  7. Bake at 180°C for 25 minutes (top of cake should go lightly golden-brown)

  8. Switch off oven and open door

  9. Leave to set for 5 minutes in the oven

  10. Remove from oven and allow to cool

Notes

Maureen gave us leftovers from Dirk's birthday (12 July 2020). Yummy!
