Lorna's Milk Tart

Ingredients
Pastry
2 cups flour
½ cup Castor Sugar
125g Butter
1 Egg
2 tsp Baking Powder
Pinch of salt
Filling
4 cups Milk
2½ tbsp Flour
1 cup Castor Sugar
½ tsp Vanilla Essence
1 tbsp Butter
2½ tbsp Cornflour
2 large Eggs
Method
Pastry
Cream butter & sugar
Add egg, flour, baking powder & salt
Mix well
Press into greased pie dish and chill for 30 minutes (30cm x 4cm deep)
Bake for 10 minutes at 220°C
Filling
Boil milk & butter
Beat eggs
Add rest of ingredients to eggs and mix to a smooth paste
Add paste to the boiling milk
Stir until thick
Pour into dish and sprinkle with cinnamon
Refrigerate overnight

Discovered in Leigh’s recipe folder in Harare when we stayed with them for Twinx & Graham’s wedding. Some family dispute over whether Lorna could pull off such a recipe as she apparently barely knew where the kitchen was...
