Lorna's Milk Tart

Ingredients

Pastry

  • 2 cups flour

  • ½ cup Castor Sugar

  • 125g Butter

  • 1 Egg

  • 2 tsp Baking Powder

  • Pinch of salt


Filling

  • 4 cups Milk

  • 2½ tbsp Flour

  • 1 cup Castor Sugar

  • ½ tsp Vanilla Essence

  • 1 tbsp Butter

  • 2½ tbsp Cornflour

  • 2 large Eggs

Method

Pastry

  • Cream butter & sugar

  • Add egg, flour, baking powder & salt

  • Mix well

  • Press into greased pie dish and chill for 30 minutes (30cm x 4cm deep)

  • Bake for 10 minutes at 220°C


Filling

  • Boil milk & butter

  • Beat eggs

  • Add rest of ingredients to eggs and mix to a smooth paste

  • Add paste to the boiling milk

  • Stir until thick

  • Pour into dish and sprinkle with cinnamon

  • Refrigerate overnight

Discovered in Leigh’s recipe folder in Harare when we stayed with them for Twinx & Graham’s wedding. Some family dispute over whether Lorna could pull off such a recipe as she apparently barely knew where the kitchen was...
