Meringues

Ingredients

  • 4 Egg Whites

  • 2ml White Wine Vinegar

  • Pinch of salt

  • 150g Castor Sugar

  • 2ml Vanilla Essence

Method

  1. Whisk egg whites until they form stiff peaks

  2. Add vinegar and salt and continue whisking for a minute

  3. Add sugar, a little at a time, while continuing to whisk

  4. Fold in vanilla

  5. Spoon or pipe mixture onto teflon sheet or greased baking tray (perfect for pavlova baskets)

  6. Bake at 120°C for one hour and then leave in oven to cool and dry out
