Meringues

Ingredients
4 Egg Whites
2ml White Wine Vinegar
Pinch of salt
150g Castor Sugar
2ml Vanilla Essence
Method
Whisk egg whites until they form stiff peaks
Add vinegar and salt and continue whisking for a minute
Add sugar, a little at a time, while continuing to whisk
Fold in vanilla
Spoon or pipe mixture onto teflon sheet or greased baking tray (perfect for pavlova baskets)
Bake at 120°C for one hour and then leave in oven to cool and dry out
