Mince Pies

Ingredients
300g Butter
180g Icing Sugar
1 large Egg
2½ ml Vanilla Essence
450g Flour
7ml Baking Powder
Pinch of Salt
1 jar Fruit Mince
Method
Grease 2 mini tart trays
Cream Butter & Sugar in food processor
Add Egg & Vanilla and mix well
Add remaining ingredients and mix to form a soft dough
Rest for at least 30 minutes in fridge
Roll out to 2 to 3mm
Cut rounds to line mini tart moulds
Cut star shapes to form tops of pies
Put a teaspoon of mince into each pie and top with star
Bake for 12 to 15 minutes at 180°C of until lightly golden
