Mince Pies

Ingredients

  • 300g Butter

  • 180g Icing Sugar

  • 1 large Egg

  • 2½ ml Vanilla Essence

  • 450g Flour

  • 7ml Baking Powder

  • Pinch of Salt

  • 1 jar Fruit Mince

Method

  1. Grease 2 mini tart trays

  2. Cream Butter & Sugar in food processor

  3. Add Egg & Vanilla and mix well

  4. Add remaining ingredients and mix to form a soft dough

  5. Rest for at least 30 minutes in fridge

  6. Roll out to 2 to 3mm

  7. Cut rounds to line mini tart moulds

  8. Cut star shapes to form tops of pies

  9. Put a teaspoon of mince into each pie and top with star

  10. Bake for 12 to 15 minutes at 180°C of until lightly golden
