Nanna's Quick 'n Easy Cheesecake

Ingredients

  • 125g ginger biscuit crumbs

  • 40g melted butter

  • 250g cream cheese (Philadelphia)

  • 397g tin sweetened condensed milk

  • 120ml fresh lemon juice (approximately 3 lemons)

  • 200g mixed summer berries (optional topping)

Method

  1. Mix biscuit crumbs and melted butter and press into base of an 18cm loose bottomed cake tin. Chill in fridge.

  2. Whisk cheese and condensed milk

  3. When combined, whisk in lemon juice

  4. Pour over prepared base and chill for at least an hour to set

  5. Decorate with fruits before serving
