Oven Chips/wedges

Ingredients
Potatoes
Duck or Goose Fat (or other tasty fat)
Coarse Salt
Any desired herbs or spices
Method
Cut potatoes into medium-sized chips (leave skin on) and place in cold water in a saucepan
Place on high heat on stove with lid on
When water boils, switch off heat, but leave chips on hot plate for 15 minutes
Turn oven on to 230°C and place tray inside to heat
Drain chips and allow to completely dry with lid off for a few minutes
Add fat, salt and spices to saucepan
Once fat melts, shake saucepan to distribute fat and spices evenly
Spread evenly onto hot oven tray
Bake for 45 to 90 minutes or until brown and crisp, turning ocassionally
