Peanut Butter Cookies

Ingredients

  • 1 cup Butter

  • 1 cup Crunchy Peanut Butter

  • 1 cup Sugar

  • 1 cup Demarara Sugar

  • 2 Eggs

  • 2½ cups Flour

  • 1 tsp Baking Powder

  • ½ tsp Salt

  • 1½ tsp Baking Soda (Bi-carb)

Method

  1. Use a stand mixer to beat butter, peanut butter and sugars together until light and fluffy

  2. Beat in the eggs

  3. In another bowl, sift flour, baking powder, baking soda and salt

  4. Slowly add dry mix to the butter mix

  5. Refrigerate for an hour

  6. Roll dough into 2-3cm balls and place on a baking sheet (can be quite close as they shouldn't spread much)

  7. Flattern each ball with a fork, making a criss-cross pattern

  8. Bake at 190°C for about 10 minutes or until cookies start to brown

  9. Allow to cool for 10 minutes as they will be very soft
