Pecan Nut Pie

Ingredients

Base

  • 85g Butter

  • 140g Plain Flour

  • 30g Icing Sugar

  • 1 tsp Vanilla Extract


Filling

  • 2 large Eggs

  • 2 large Egg Yolks

  • 240ml/330g Maple Syrup

  • 115g Butter

  • 230g chopped Pecans

Method

  1. Mix together the base ingredients in a food processor

  2. Press into a flan dish

  3. Cool in fridge for an hour 

  4. Cook at 180°C for 20 to 25 minutes

  5. Melt all filling ingredients except nuts in a 'Baine Marie' until butter has melted

  6. Add the nuts

  7. Pour this mixture onto cooked base

  8. Cook at 180 °C for a further 20 to 25 minutes
