Pickled Curried Beetroot
from Sally's kitchen

Ingredients
1kg cooked Beetroot, peeled & diced
3 Onions, chopped
2 cups Sugar
1 tbsp Curry Powder
Vinegar to cover
Flour to thicken
Method
Mix beetroot, onion, sugar and cayenne pepper together in a large saucepan
Add enough vinegar to cover and boil for 30 minutes
Thicken with flour
