Pickled Curried Beetroot

Ingredients

  • 1kg cooked Beetroot, peeled & diced

  • 3 Onions, chopped

  • 2 cups Sugar

  • 1 tbsp Curry Powder

  • Vinegar to cover

  • Flour to thicken

Method

  1. Mix beetroot, onion, sugar and cayenne pepper together in a large saucepan

  2. Add enough vinegar to cover and boil for 30 minutes

  3. Thicken with flour
