Pizza Dough

from James' B&B (Alpine Springs B&B in Whistler, Canada)

Ingredients

Ingredients (for two 35cm pizzas)

  • 1¼ cups warm Water (around 45°C)

  • 1 tbsp Yeast

  • 3½ cups Flour

  • 1 tsp Salt

  • ¼ cup Olive Oil

  • Pinch of Sugar

Method

  1. Put a ¼ cup of warm water in a bowl

  2. Sprinkle the yeast on the water and let rest for 2 minutes

  3. Add the pinch of sugar and cover the bowl

  4. Put the bowl in a warm place for 5 to 6 minutes (the yeast will begin the bubble)

  5. Mix flour and salt together in a large bowl

  6. Make a small well and pour in the yeast

  7. Add the rest of the water and the olive oil

  8. Mix with your hands

  9. Once the ingredients are well mixed, make a ball and then knead, on a floured surface, for 10 minutes until smooth and elastic

  10. Make a ball again and put in an oiled bowl

  11. Cover with plastic wrap and let rise for 2 hours in warm place

  12. Divide the dough in two parts. Roll out to the desired thickness

  13. Pinch the sides and cook at high heat (230 to 260°C if possible) for 2 minutes on a pizza stone

  14. Remove from oven, garnish and cook until the crust is golden
