Pizza Dough
from James' B&B (Alpine Springs B&B in Whistler, Canada)

Ingredients
Ingredients (for two 35cm pizzas)
1¼ cups warm Water (around 45°C)
1 tbsp Yeast
3½ cups Flour
1 tsp Salt
¼ cup Olive Oil
Pinch of Sugar
Method
Put a ¼ cup of warm water in a bowl
Sprinkle the yeast on the water and let rest for 2 minutes
Add the pinch of sugar and cover the bowl
Put the bowl in a warm place for 5 to 6 minutes (the yeast will begin the bubble)
Mix flour and salt together in a large bowl
Make a small well and pour in the yeast
Add the rest of the water and the olive oil
Mix with your hands
Once the ingredients are well mixed, make a ball and then knead, on a floured surface, for 10 minutes until smooth and elastic
Make a ball again and put in an oiled bowl
Cover with plastic wrap and let rise for 2 hours in warm place
Divide the dough in two parts. Roll out to the desired thickness
Pinch the sides and cook at high heat (230 to 260°C if possible) for 2 minutes on a pizza stone
Remove from oven, garnish and cook until the crust is golden
