Plum Crazy

Ingredients

  • 250ml Dry Red Wine

  • 250ml Water

  • 200g Sugar

  • 5ml ground mixed Spice

  • 8g (15ml) Cornflour

  • 1kg Santa Rosa plums, washed


To serve

  • 250ml fresh Cream, whipped

  • 8 large meringues

Method

  1. Bring the water, red wine, sugar, spice and cornflour to the boil

  2. Add plums, bring to the boil and remove from heat

  3. Allow to cool, chill well

  4. Spoon plums with syrup into glass bowl or bowls

  5. Top with swirl of cream and a meringue, serve at once
