Pork chops in Cider

Ingredients
Pork chops
Shallots
Sage
Butter
Cider
Parsley
Salt & Pepper
Method
Finely chop the onion & sage
Rub into a paste with some butter, salt & pepper
Score the chops and rub in the paste
Fry until golden
Add cider and simmer
Add a knob of butter and chopped parsley
Serve with sautéed potatoes and greens
