Pork Ribs

Easy, fall-off-the-bone oven baked ribs

Ingredients

Ribs

  • 2kg pork ribs

  • Salt & Pepper


Sweet & Spicy BBQ Sauce

  • 2 tablespoon olive oil

  • ½ cup finely diced onion

  • 1 teaspoon ground cumin

  • 1 cup home-made ketchup

  • 2 tablespoon hot chilli sauce (we use home-made, otherwise try Sriracha)

  • 4 tablespoons brown sugar

  • 2 tablespoon apple cider vinegar

  • Salt and ground pepper, to taste

Method

Roast the ribs

  • Generously season both sides of the ribs with salt and pepper then place on a couple of deep baking sheets.

  • Cover tightly with aluminium foil, and then bake at 135°C for 3 - 4 hours


BBQ Sauce

  • While the ribs bake, make the barbecue sauce by heating the olive oil in a saucepan over medium heat.

  • Add the onions and cook until translucent.

  • Add the cumin and stir.

  • Next, add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar.

  • Stir to combine, season with salt then cook for 2 minutes.

  • Taste and adjust seasoning.

  • Blend and simmer on low heat for 10 minutes.

  • Set aside until the ribs are ready.


To finish...

  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce. Move an oven rack near to the top of the oven. Turn broiler to high and broil the ribs

  • Either grill one baking sheet at a time for 3 - 4 minutes, just until the barbecue sauce begins to caramelize or throw the ribs on the braai to finish them off.
