Portuguese Giblets or Livers

Ingredients

  • 250g Chicken Gizzards, Necks, Hearts, Livers or a mix of each

  • Olive Oil

  • 1 Onion, finely diced

  • 2 cloves Garlic, crushed

  • ½ tsp Paprika

  • 1 Green Pepper, diced

  • 1 Tbsp homemade Hot Chilli Sauce

  • 1 cup homemade Passata

  • Salt and Pepper

  • ½ cup White wine

  • 1 Tbsp Sugar

  • 2 Bay Leaves

  • ½ cup Cream

Method

  1. Fry onions and garlic in a little olive oil over medium heat until translucent

  2. Add giblets, paprika, chilli sauce and fry over high heat for 5 minutes

  3. Add green peppers, passata, wine, sugar and bay leaves and bring to a simmer

  4. Allow to simmer for 15 minutes

  5. Remove bay leaves

  6. Stir in cream

  7. Serve with crusty bread
