Ratatouille
from Manou's kitchen

Ingredients
1kg fresh Tomatoes
1 tin of Tomatoes
500g Aubergines
500g Courgettes
2 Green Peppers
2 Onions
Olive Oil
Salt & Pepper
Bunch of Thyme
2 Bay Leaves
4 Garlic Cloves, crushed
1 tbsp Mixed Herbs
Method
Slice aubergines and place on a tray in a single layer
Sprinkle with salt to extract water and leave for 1 to 2 hours
Cut all vegetables into cubes of equal size
Use olive oil to fry onions
Add peppers, courgettes and aubergines
Sauté for 5 minutes then add all other ingredients
Cook on a low heat for 45 minutes
