Ratatouille

from Manou's kitchen

Ingredients

  • 1kg fresh Tomatoes

  • 1 tin of Tomatoes

  • 500g Aubergines

  • 500g Courgettes

  • 2 Green Peppers

  • 2 Onions

  • Olive Oil

  • Salt & Pepper

  • Bunch of Thyme

  • 2 Bay Leaves

  • 4 Garlic Cloves, crushed

  • 1 tbsp Mixed Herbs

Method

  1. Slice aubergines and place on a tray in a single layer

  2. Sprinkle with salt to extract water and leave for 1 to 2 hours

  3. Cut all vegetables into cubes of equal size

  4. Use olive oil to fry onions

  5. Add peppers, courgettes and aubergines

  6. Sauté for 5 minutes then add all other ingredients

  7. Cook on a low heat for 45 minutes
