Roast Suckling Pig

Ingredients

  • Suckling pig

  • Salt

Method

  1. Score the skin and rub liberally with salt inside and outside

  2. Roast for 2½ hours at 160°C

  3. Reduce the temperature to 150°C and roast for a further 3½ hours

  4. Allow to stand for 10 minutes then serve with lots of apple sauce
