Roasted Butternut Soup

Savanna's Roasted Butternut Soup

Ingredients
1 large Butternut, cut into 2cm chunks
200g Bacon, chopped
900ml Chicken Stock (4 cubes)
4cm Ginger, grated or finely chopped
4 Onions, sliced
5 cloves Garlic, chopped finely
Nutmeg, to taste
3 small Chillies
Olive oil and fat dripping
Method
Mix oil/fat and butternut in a roasting pan and roast at 180°C for about 1 hour (or until it starts to brown slightly)
Meanwhile fry bacon until fat renders
Add onions and fry until soft
Add ginger, chillies and garlic and fry for 5 minutes
Add stock and bring to the boil
Simmer until the butternut is ready
Add butternut and use a stick blender to blend the mixture
Add nutmeg to taste
