Rosemary Chicken with Tomato Sauce
from GoodFood 101 One-pot dishes

Ingredients
1 tbsp Olive Oil
8 boneless, skinless Chicken thighs
1 sprig fresh Rosemary, leaves finely chopped
1 Red Onion, finely sliced
3 Garlic cloves, sliced
2 Anchovy fillets, chopped
400g can Tomatoes, chopped
1 tbsp Capers
75ml Red Wine or Stock
Method
Heat half the oil in a pan and brown the chicken
Add half the rosemary and stir to coat the chicken
Set the chicken aside on a plate
In the same pan, heat the rest of the oil and fry the onion until soft
Add garlic, anchovies and remaining rosemary and fry for 2 minutes
Add tomatoes, capers and wine or stock
Bring to the boil and add the chicken pieces
Cover and cook for about 20 minutes or until the chicken is cooked
Serve with a crusty bread
