Souvlakia

Ingredients

  • 350g cubed Lamb

  • 1 medium Onion, peeled

  • 50ml Olive Oil

  • 4 Cloves Garlic, peeled

  • 1 tsp ground Cumin

  • 1 tsp freshly ground Black Pepper

  • 1 tsp Cayenne Pepper

  • 4 Pita Breads

  • 4 tbsp Yoghurt

  • A little chopped raw Onion and sprinkling of Cayenne Pepper, to serve

Method

  1. Put the lamb into a deep bowl

  2. Put the onion into a blender with the oil, garlic, cumin, cayenne and black pepper, reduce to pulp

  3. Place the pulp on the lamb cubes and toss well

  4. Leave to marinade for 1 hour or more

  5. Heat the grill, so that the lamb crisps on the outside and the inside remains pink

  6. Shake off excess marinade before frying, till the cubes are slightly charred, about 4 to 6 minutes tossing occasionally to get all the sides cooked

  7. Sprinkle with salt, stuff into a pita bread and drizzle yogurt over them

  8. Sprinkle with raw onion and cayenne pepper
