Sugar Cookies

Ingredients

  • 275g Butter

  • 1 cup Sugar

  • 1 Egg

  • 2â…“ cups (350g) Flour

  • 1 tsp Vanilla extract

Method

  1. Use a stand mixer to beat butter and sugar together until light and fluffy

  2. Beat in the eggs and vanilla

  3. Mix in flour

  4. Chill for an hour

  5. Divide into equal-sized portions (at this stage the portions can be frozen and baked fresh at a later stage)

  6. Flatten portions to 3mm thick and arrange on a baking sheet allowing room to spread

  7. Bake at 190°C for 8 to 10 minutes

  8. Allow to cool for 10 minutes on the baking sheets, then transfer to wire racks to cool completely
