Sugar Cookies

Ingredients
275g Butter
1 cup Sugar
1 Egg
2â…“ cups (350g) Flour
1 tsp Vanilla extract
Method
Use a stand mixer to beat butter and sugar together until light and fluffy
Beat in the eggs and vanilla
Mix in flour
Chill for an hour
Divide into equal-sized portions (at this stage the portions can be frozen and baked fresh at a later stage)
Flatten portions to 3mm thick and arrange on a baking sheet allowing room to spread
Bake at 190°C for 8 to 10 minutes
Allow to cool for 10 minutes on the baking sheets, then transfer to wire racks to cool completely
