Tiramisu

from Omi's kitchen

Ingredients

  • 2 large Eggs, separated

  • 500g Mascarpone

  • 4 tbsp Castor Sugar

  • 1 tsp Vanilla Essence

  • 250g Amaretti biscuits

  • Strong coffee

Method

  1. Whisk egg whites

  2. In separate bowl, cream egg yolks & sugar

  3. Beat in mascarpone and vanilla

  4. Fold in egg whites

  5. Soak enough biscuits to cover the bottom of the serving bowl in the coffee for a few seconds

  6. Remove and drain for a few seconds

  7. Place in bottom of serving dish

  8. Cover with mascarpone mixture

  9. Repeat layers until serving dish is full, finishing with a mascarpone layer

  10. Refrigerate for at least one hour
