Tiramisu
from Omi's kitchen

Ingredients
2 large Eggs, separated
500g Mascarpone
4 tbsp Castor Sugar
1 tsp Vanilla Essence
250g Amaretti biscuits
Strong coffee
Method
Whisk egg whites
In separate bowl, cream egg yolks & sugar
Beat in mascarpone and vanilla
Fold in egg whites
Soak enough biscuits to cover the bottom of the serving bowl in the coffee for a few seconds
Remove and drain for a few seconds
Place in bottom of serving dish
Cover with mascarpone mixture
Repeat layers until serving dish is full, finishing with a mascarpone layer
Refrigerate for at least one hour
