Tomato Bredie
from Omi's kitchen

Ingredients
2 large Onions, sliced
4 cloves Garlic, chopped
2ml Peppercorns
2ml ground Cloves
125ml Lamb Stock
25ml Vegetable Oil
2 sticks Cinnamon
1kg Lamb shanks, cut into threes
3cm fresh Ginger, finely chopped
2 Cardamom Pods
1kg very ripe Tomatoes, chopped or 3 cans tomatoes, chopped
1 Green Chilli, chopped
6 medium Potatoes, peeled & halved
Salt, Pepper, Sugar to taste
Chopped Parsley for garnish
Method
Onions, garlic, peppercorns, cloves, water in saucepan & bring to boil
Simmer until all water has been absorbed
Add oil & cinnamon and braise until onions are golden
Add meat, ginger and cardamom pods & stir thoroughly
Turn down the heat, cover saucepan with tight-fitting lid and simmer gently for 30 minutes
Add toms & chillis
Close lid & simmer for 20 minutes
Now add pots, salt, pepper, sugar & salt to taste
Replace lid & simmer until pots are cooked
Garnish with chopped parsley and serve on rice
