Tomato Bredie

Ingredients

  • 2 large Onions, sliced

  • 4 cloves Garlic, chopped

  • 2ml Peppercorns

  • 2ml ground Cloves

  • 125ml Lamb Stock

  • 25ml Vegetable Oil

  • 2 sticks Cinnamon

  • 1kg Lamb shanks, cut into threes

  • 3cm fresh Ginger, finely chopped

  • 2 Cardamom Pods

  • 1kg very ripe Tomatoes, chopped or 3 cans tomatoes, chopped

  • 1 Green Chilli, chopped

  • 6 medium Potatoes, peeled & halved

  • Salt, Pepper, Sugar to taste

  • Chopped Parsley for garnish

Method

  1. Onions, garlic, peppercorns, cloves, water in saucepan & bring to boil

  2. Simmer until all water has been absorbed

  3. Add oil & cinnamon and braise until onions are golden

  4. Add meat, ginger and cardamom pods & stir thoroughly

  5. Turn down the heat, cover saucepan with tight-fitting lid and simmer gently for 30 minutes

  6. Add toms & chillis

  7. Close lid & simmer for 20 minutes

  8. Now add pots, salt, pepper, sugar & salt to taste

  9. Replace lid & simmer until pots are cooked

  10. Garnish with chopped parsley and serve on rice
